Ministrone Soup

1 Family size package of Vegetable Soup or 2 Regular size
1/2 pound Italian Sausage
1 tsp Garlic powder
1 28 ounce can Stewed Tomatoes
1 19 ounce tin Kidney Beans, drained
10 cups water
If you have celery or red or green pepper add 1/4 cup
diced of each
1 tsp Thyme
1 tsp basil
1 tsp oregano
( I tbsp of “Italian Seasoning” can be used instead of above
3 spices)
1 tsp chili powdwer
1/2 cup macaroni


In large pot brown the sausage ( add 1 tbsp oil if it sticks)
Add the rest of ingredients except not the macaroni.
Bring to the boil and simmer for 1/2 up to 1 hour.
Add the macaroni and simmer for another 15-20 minutes.

Recipe can be 1/2’d

Yield: 10, 1 1/2 cup servings

Harvest Bowl Baked Beans

One package of Family Sized Bean Soup

4 cups water

¼ cup Molasses OR Maple Syrup

¼ cup Ketchup

1 Tbsp Yellow Mustard

Directions:

Cover beans with water and Soak Beans overnight or Quick Soak: Cover with water in a saucepan, bring to a boil and boil for 2 minutes; remove from heat and let soak for 1 hour.

No need to drain beans. Mix beans, seasoning package from soup mix, maple syrup or molasses, mustard and ketchup in slow cooker. Make sure beans are covered in water; you may need to add more. Slow cook for 4 hours on high or 6-8 hours on low. Alternatively, put the mixture in a covered oven-proof dish and bake it for 6 hours at 300 degrees. Check beans ½ way through cooking; more water may be necessary if looking dry.
