Clean out the fridge Soup

One package Family Size Vegetable Soup

8-10 cups water

Large soup pot or dutch oven

Leftovers-whatever you can find in the frig along with any vegetables that are on their last legs and jars/bottles of condiments with a couple of spoonfuls left in the container.

½ to 1 cup leftover any kind of meat,chicken cut in bite size pieces or leftover lentils,legumes.

1-2 cups any leftover vegetable including mashed potatoes

1-2 cups any soft/limp/ready to throw out raw vegetables. Cut off bad spots and cut in bite size pieces.

½ cup rice[not instant] barley, quinoa, pasta or noodles

1 can stewed tomatoes

1 Tbsp Worcestershire sauce

Add a small amounts of water to small bits of condiment [mustard, ketchup, Asian sauces, salsa, etc] in their container, shake well and add to soup pot

Combine everything in pot and bring to boil and simmer for at least ½ hour, preferably one hour or longer. If using pasta or noodles add in the last ½ hour of cooking or it will be too mushy.

Makes great use of leftovers and tastes great and costs next to nothing.

 

Yield: 10, 1 ½ cup servings
